black bean enchiladas

place oil on skillet. fry corn tortillas lightly and dip in green or red enchilada sauce. place homemade black beans in center of tortilla and squash the beans a little. add cheese. roll together and place in casserole dish. slather with green or red sauce once all of your enchiladas are rolled. add cheese to your liking. cover with foil. remove foil for last 10 minutes and make sure that cheese is bubbling. service with guacamole, sour cream or crema, salsa, and chopped ice burg lettuce.
