sudanese eggplant

this delicious dish was taught to me by my sister-in-law who has a sudanese friend. she showed me all of the spices in her kitchen. they were plentiful and stored in jars. as a beginner cook i asked,  "will the spices go bad?". she said, "no, i cook all of my meals from scratch?". inspiring. or, i could just stick to my cheat recipes!!!

get a mixing bowl and combine salt, pepper, ginger, cumin, paprika, a pinch cloves, and a  little freshly grated nutmeg. mix in 1 pound of ground beef. put away for awhile. saute a whole eggplant sliced into circles. don't use much oil. get your 8 x8 casserole dish and cover the bottom with drizzles of olive oil. place eggplant circles down tic tac toe style. next layer will be the spiced beef. next layer will be eggplant. next layer will be the spiced beef and the last layer will be eggplant. bake with tin foil at 350 degrees. take off foil for last 10 minutes. make sure beef is at 140 degrees with your thermometer. flip onto plate and serve hot.
