savoury taco pie

poke holes at bottom of thawed pie shell and bake for 1/2 of cooking time on instructions. remove pie shell from oven and layer roasted portabello mushrooms sprinkled with taco seasoning and pico de gallo, flour tortila, layer shredded roasted chicken with taco seasoning and pico de gallo, flour tortilla, layer mushrooms, layer chicken, flour tortilla. cover with shredded cheddar cheese and bake according to last half of pie shell instructions and cover edges with tin foil. remove tin foil last 7 minutes of baking so edges can brown. cut triangle pie piece and plate with guacomole as "whipped cream" garnish. add a teaspoon of fresh chopped cilantro on top of pie piece. yum.
